Deep-steamed Sencha

Origin: Shizuoka, Japan

One of several variations of sencha, “fukasmushi” refers to a longer steaming process that the leaves undergo to produce a Japanese green tea that is less vegetal in taste than regular sencha, but with a richer and smoother flavor.  The extra steaming and rolling results in darker and finer leaves, liquor with more body, less astringency, and a faint sweetness.

Preparation:  Bring water to 175ºF/79°C.  Use 1 ½ tsp per 6 oz water.  Steep 30 to 60 seconds.
